Nice idea. But i never thought about actual phone camera, that´s clever 
i seen many setups with certain diode wavelength paired with photosensor or phototransistor/resistor in simple to made DIY circuit. Friend of mine once built one prototype, and for general use it was more than sufficient.
I assume that main purpose will be to establish copper content in electrolyte. Go for it, it will be good to go.
Who knows... Maybe also the LED on the side of the camera could be used if some clever mirror-like reflecting device is placed behind the cuvette... But this idea is quite expeditious
