Mass balance and sampling

in a process with dore bars dissolved by nitric acid to have silver nitrate (and electro winning way to recover silver). And in another hand undissolved gold powder, smelting and electrorefining way.
What would be the critical points for sampling and to have a good mass balance controlling?

Not really sure what you are asking for mass balance. What is the original assay of the doré bar? Did you have to inquart to digest the alloy in nitric acid?
