This may work only if you have large ingots. It's hard to engrave small details.

Also, graphite is not wear resistant and it sublimates a little each time you pour gold.

With modern technology (CNC) that's not much of a concern, but the sublimation you suggested is-------as is the problem of achieving the proper flowing of the molten gold. That's a particular problem with small ingots, which readily reach the freezing point of the metal. The problem is not any better addressed by using metal molds. A lttle experience in casting ingots will put all of this in focus.
