Thistle funnel is the name we learnt at school.

Over the years I have only ever seen them used as liquid addition funnels into over pressure flasks.
The long stem lets you build up quite a bit of head and the thistle will hold the amount of reaction liquid above the stem opening if the pressure keeps building up.

These are old school before addition funnels with ground glass joints, you need rubber or cork bungs and all the attendant excitement that goes with fitting them.
If you want to try your hand at glass working you could use these as very good starting point for air locks that are common in home brewing and other gas liberating reactions.

EDIT:
Here is a typical glass airlock with the same style funnel.
Another use was in an osmosis experiment with semipermeable membranes that were stretched over the opening and held in place with an elastic or string in the groove.
