How do the gold molecules arrange themeless as they come out of solution?
Is it a loosely formed cogent of molecules clumped by weak molecular attraction.
Or do they form distinct crystalline structure of variable sizes dependent on the local environment?
Obviously if we could precipitate the largest partial possible it would make our job easier.
An interesting question.

I am not sure you can call them molecules, as they are nearly pure elemental particles of Au. I think particles is the preferred description. Perhaps the particle size of the precipitating compound may affect Au particle size, as well as temperature, turbidity of solution, and maybe a couple other factors. This holds for chemically reacting salts.
Electrowinning has more end crystalline growth, relative to predominately electric current parameters, and electrolyte composition factors, as well as the construction of the cell.
This is pure theory, which I would love to test, but I do not have the adequate lab, with associated microscopes, to observe the particle deposition.
