I am in the process of buying a gold ring for the purpose of selling it for profit. My problem is, how can I determine the weight of the gold if it's encrusted with a large stone?

Remove the stone.

If they're actually diamonds, I don't worry about it. A large diamond will be worth much more per gram than the gold. Even melee (little stones) are usually worth more per gram than gold unless they're spit.
