Annealing, in most metal processes are to soften the metal, often hardened from overworking it. It can help keep things like plachets from cracking when stamped.

The minting process also involves annealing the planchet before stamping. Can anyone provide insight on why this is done?

The metal work hardens it as it is pressed.
Annealing it will bring it back to a soft malleable state.
